For the brownies – preheat an oven to 180°C. Melt the chocolate and butter together in a bowl over boiling water. In a separate bowl – whisk the brown sugar and golden syrup together with the eggs. Slowly whisk the melted chocolate into the egg and sugar mixture, then gently whisk in the flour.
For the Manhattan cocktail – pour the ingredients into a glass and stir them over ice. Take a photo of yourself drinking it and post it on Instagram with #berniesdinermossvale so we know who has made it. Only drink half – put the rest into the brownie mix and stir through.
Line a baking tray with paper and pour in the brownie mix. Bake in the oven for 35 minutes, or until a skewer pushed into the middle comes out clean. Leave to cool to room temperature, then slice and serve with a dusting of icing sugar.
350g high-quality dark chocolate
250g brown sugar
3 teaspoons golden syrup
1 cup flour
30ml sweet vermouth
60ml rye whisky
2 dashes bitters
