“One of the great things we have in Australia is that, as an entire country, we are probably the most progressive when it comes to coffee. There are great hubs in places like California, Scandinavia and the United Kingdom, but when it comes to Australia, there’s a really consistent spread of quality.”
Leading the charge of caffeine connoisseurs in the Illawarra is speciality roaster Delano Coffee, which supplies cafes and restaurants not just in the region, but all the way from Townsville to Tasmania. Over the past seven years, Delano Coffee have been constantly refining their technique in pursuit of the perfectly brewed cup.
“We understand so much more about coffee than we did just five or ten years ago,” explains Boris Georgiou, Delano Coffee’s Manager. “We define speciality coffee by three main components; quality, transparency and the science behind it – and we’re constantly evolving in all three. Whether that’s playing with fermentation techniques during processing, or adjusting the flow and pressure of our coffee machines to improve the flavours.”
For the team behind Delano Coffee, it’s a love of the business that keeps them evolving.
“We’re never sitting around thinking, ‘what are we going to do next?’” Boris says. “We come to work each day and we love what we do. We’re passionate about it and that drives us to keep experimenting and innovating. How often can people honestly say that?”
