Chef’s note: It’s important to use the best quality tuna when preparing this dish. Talk to your local fish monger about the best tuna for raw dishes.
Finley slice the tuna into 4mm slices. Prepare the passionfruit dressing by whisking the ingredients together in a bowl.
Place 6 pieces of yellowfin tuna on each plate. Pour over the passionfruit dressing, then scatter with black beans, sliced radish and micro coriander.
400g yellowfin tuna
3 small radishes, thinly sliced
fermented black beans, to serve
micro coriander, to serve
50g passionfruit pulp
20ml lime juice
10ml fish sauce
40ml vegetable oil
1 tsp caster sugar
