Chefs’ note: A classic drink in its simplest form, the Old Fashioned is one of the oldest known cocktails. With good ingredients, sometimes less is more. The Howlin’ Wolf uses demerara sugar syrup in this cocktail, but you can substitute this with light brown sugar if you don’t have it available.
To make the Demerara sugar syrup – warm the sugar and water in a saucepan over a low heat, being careful not to bring to a simmer. Stir constantly until the sugar is dissolved. Transfer into a bottle and leave to cool.
To serve – combine all the ingredients except the orange peel together over ice in a mixing glass. Stir and taste continually until your desired dilution is reached. Pour into a chilled glass over a large hand-cut ice block. Garnish with flamed orange peel.
