Chef’s note: Acai is an Amazonian berry, high in antioxidants and protein. You can find acai purée at most health food stores. The granola recipe used for the brekkie cup smoothie will make more than required, but will keep well in the cupboard.
For the acai frappé – place all the ingredients together in a blender and blitz for 1 minute. Serve with shaved coconut.
For the brekkie cup smoothie – start by making the homemade granola. Preheat an oven to 160⁰C. In a saucepan, gently heat the honey, maple syrup, coconut oil, brown sugar, vanilla, cinnamon and salt over a low heat and stir to form a thick syrup. In a large mixing bowl, combine the syrup with the oats, cashews, almonds, pepitas and sunflower seeds. Spread the mixture onto a lined baking tray and roast for 35 minutes, stirring every 10 minutes to help clump the oats together. Remove from the oven and cool to room temperature. Chop the dried fruits and combine with the coconut flakes. Mix through the granola and set aside.
To make the brekkie cup smoothie – place all the ingredients in a blender and blitz for 1 minute, then serve topped with extra granola.

¼ cup Iranian dried figs
¼ cup dried mango slices
5 Medjool dates
